Cinnamon apple coffee cake recipe

Coffee cakes do not get featured on magazine covers very often, but they sure generate excitement when you bring them out for your guests. This recipe for cinnamon apple coffee cake is easy to make and has a tender soft texture.

Coffee cakes are great to prepare for casual dinner parties, potlucks, and as a treat to share with co-workers. Please note that coffee cakes tend to taste best on the day they are made, so it is best to eat them up right away, which is usually not a problem.

Recipe ingredients:

1-1/4 cups sugar

1-1/2 teaspoons cinnamon

2 large apples, cored, peeled, and thinly sliced

1/2 cup butter

2 eggs

1-1/2 cups all purpose flour

1-1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup plain yogurt

1 teaspoon vanilla

2/3 cup finely chopped walnuts

Grease a 13 x 9 baking pan and heat your oven to 350 degrees F. In a small bowl, combine the sugar and cinnamon. Put the apple slices in another bowl and stir 2 Tablespoons of the cinnamon sugar into the apples.

Now in a larger mixing bowl, cream the butter and remaining cinnamon sugar with an electric mixer. Add the eggs one at a time, beating after each. In yet another bowl, blend the dry ingredients (flour, baking powder, soda, and salt). On low speed, add the flour mixture to the creamed butter in small increments. Alternate flour additions with additions of yogurt until all the dry ingredients and yogurt have been mixed into the cake batter. Stir in the vanilla and chopped walnuts.

In the baking pan, spread half of the batter and then arrange the apples over the batter. Spoon and spread the rest of the batter over the apples. Bake the coffee cake for about 30 minutes until a toothpick comes out clean from the center. After removing from the oven, allow the coffee cake to cool for 20 minutes. Then loosen the edges with a knife and invert the cake onto a rack to finish cooling. Flip it back over onto a serving plate and eat it up.
