Beef asparagus stir fry recipe

This beef stir fry recipe offers a tasty way to use round steak. Round steak is a flavorful but tough cut of beef, so finding a good way to cook it can be a bit of a challenge. Because the meat is cut into thin strips for the stir fry, the toughness of the beef is overcome. Be aware that the red chili pepper is going to give the stir fry a hot bite.

Recipe ingredients:

1 pound round steak

2 Tablespoons soy sauce

1 Tablespoon dry sherry

2 teaspoons finely grated ginger

1 teaspoon sesame oil

1 clove garlic, crushed

1 red chili pepper, cut into very thin strips

12 spears fresh asparagus

2 Tablespoons peanut oil

1 teaspoon cornstarch

To prepare the beef, trim it of any fat or gristle and then slice it into thin strips across the grain. In a medium bowl stir together the soy sauce, sherry, ginger, sesame oil, garlic, and chili pepper. Add the meat to the marinade and stir together thoroughly to coat the meat. Allow the beef to set for 30 minutes and then drain the marinade off the beef, but reserve the liquid for making sauce later.

Chop the asparagus into 2-inch pieces and remove the woody ends of the spears. In a wok or large heavy-bottom skillet, heat 1 Tablespoon of the peanut oil and stir fry the asparagus for 2 minutes on medium heat. Remove the asparagus from the wok. Heat the remaining Tablespoon of peanut oil and cook the meat in small batches over high heat, stirring and turning constantly. Brown the meat strips but do not cook all the way through. Remove the beef onto paper towels to drain.

Whisk the cornstarch into the reserved marinade. Put all the asparagus and meat back into the hot wok along with the marinade liquid and stir fry until the meat is cooked completely and the sauce thickens. Serve immediately with rice.
