Recipe for beef tacos

Beef tacos are a typical week day meal that most people enjoy. Aside from chopping a few vegetables, tacos are not very difficult to prepare and they are easily ready in half an hour.

The seasoned beef and beans filling for the tacos can also be frozen for later use if you want to have some convenience food on hand. Keep the taco filling in a sealed container in the freezer for up to 4 weeks.

Recipe ingredients:

1 pound ground beef

1 onion, finely chopped

1/3 cup tomato paste

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon coriander

1 16-ounce can refried beans

12 taco shells

1 cup shredded Cheddar cheese

2 carrots, grated

2 tomatoes, sliced

1/2 head of lettuce, shredded

Heat a large skillet to medium heat and brown the ground beef and sauté the onions. Drain the fat and then add the tomato paste, chili powder, cumin, coriander, and beans. Stir up thoroughly and cook for a couple minutes until every thing is hot.

Warm up your taco shells in a 350 degree F oven for 8 minutes. To serve, fill the taco shells with the seasoned beef and beans. Top with cheese and then carrots, tomato, and lettuce. Garnish with sour cream, guacamole, and/or salsa as desired.
