Buttermilk pancakes recipe
Mixing up some buttermilk pancakes, or flapjacks, from scratch is very easy. They make a special and fun breakfast, and pancakes are also worthy of dinner on those days when you are not feeling very creative or there just is not very much hanging out in the refrigerator.
Having a griddle is very helpful when making pancakes, but if you do not have one, your largest frying pan will get the job done. The griddle is easier to work on because it does not have the high sides like a pan to get in the way of pancake flipping. You will want to get your griddle or pan to a medium to medium high temperature. The surface is properly heated when drops of water sizzle and dance on the surface.
Recipe ingredients:
1 egg
1 cup buttermilk
2 Tablespoons melted butter
1 cup flour
1 Tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Use a large bowl and beat the egg until fluffy. Then you will beat in the buttermilk and melted butter. In another bowl, combine the dry ingredients (flour sugar, baking powder, baking soda, and salt). Then sift the dry ingredients directly into the egg and buttermilk mixture. Stir together until a moist batter forms. Make sure your griddle is sufficiently heated and has melted butter all over it. Use about a 1/4 cup of batter to make each pancake and drop the batter onto the griddle. Cook until the batter puffs, looks a little dried out on the edges, and bubbles are coming through across the surface of the pancake. Then flip the pancakes and spread butter on the cooked side while the other side cooks.
Unless you have a really big griddle, you will need to do batches to use up all the batter. As you remove cooked pancakes and start new ones, put the finished pancakes on a plate and cover with a big pan lid or pie plate. This will keep them warm and moist until they are ready to serve. Recipe makes about 8 pancakes. To make more, just double the recipe ingredients.
You can also add 1 cup of blueberries (frozen or fresh) and a pinch of cinnamon to this recipe if you want to make blueberry pancakes.
