Oven fried chicken breasts recipe
For those people who adore fried chicken but tend not to feel up to the hassle of the deep fryer, oven fried chicken is a convenient alternative. When you see a good price on a package of boneless chicken breasts, have this recipe handy so you can make a pan of wonderfully crunchy white meat chicken. This recipe keeps the chicken juicy, and it is a very quick recipe for those days when you need to get dinner together in a hurry.
Recipe ingredients:
2 eggs
1 Tablespoon olive oil
1/2 cup grated Parmesan cheese
1-1/2 cups bread crumbs
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon garlic powder
1/4 teaspoon cayenne pepper
8 skinless, boneless chicken breast halves
Get your oven heating to 450 degrees F and spread the olive oil on a baking sheet big enough to hold all the chicken. In a shallow bowl beat the eggs. Then in a separate shallow bowl or pie pan, stir together the cheese, bread crumbs, salt, pepper, garlic powder, and cayenne pepper. One at a time dip the chicken breasts in the egg and then dredge both sides in the bread crumb mix. Make sure to coat the chicken breasts completely. Arrange the chicken pieces on the oiled baking sheet. Bake in the hot oven for 15 to 20 minutes until they are golden brown and firm to the touch.
