Ginger chili chicken drumsticks recipe

The red pepper flakes in this chicken recipe will certainly give it a spicy bite, but the cucumber yogurt sauce will temper the heat with a cool creamy blast.

For a unique main dish or party finger food, this recipe for spicy chicken drumsticks delivers. This is also a nice recipe to have handy so you know what to make when you see a good price on a package of drumsticks.

Recipe ingredients:

12 chicken drumsticks

1 Tablespoon fresh grated ginger

1/4 teaspoon dried red chili flakes

1/4 teaspoon turmeric

1 teaspoon lemon juice

1 teaspoon lemon zest

1 cup plain yogurt

1-1/2 teaspoons brown sugar

For cucumber yogurt sauce

1 cup plain yogurt

1/4 teaspoon dried red chili flakes

1 cucumber, finely chopped

Salt

1/4 teaspoon sugar

Wash the chicken drumsticks and pat them dry. In a big bowl stir together the ginger, chili flakes, turmeric, lemon juice, lemon zest, yogurt, and sugar. Add the chicken to the marinade and stir well to make sure that the chicken is well coated. Cover with plastic wrap and refrigerate for at least 3 hours or overnight if that is convenient. Stir the drumsticks in the marinade occasionally.

Remove the drumsticks from the marinade and arrange them on a foil-lined broiler pan brushed with oil or melted butter. Reserve the leftover marinade and use it to brush the drumsticks frequently while you broil them 6 to 8 inches from the heat source. Cook for 8 minutes and then flip the chicken and broil for another 8 minutes. Cook longer if the chicken does not appear to be cooked through.

Make the cucumber yogurt by stirring together the other cup of plain yogurt with the chili flakes, cucumber, and sugar. Season with salt to suit your taste.
