Flank steak recipe
Flank steak is a flat thin cut of beef. Although not particularly tender, it does have a very nice flavor. Flank steak does not cost as much as fancier cuts of beef, but it is not the cheapest cut either.
This recipe for flank steak produces a tender beef dinner with a simple blend of vegetables along with a mild sauce.
Recipe ingredients:
1 Tablespoon flour
3/4 teaspoon dried thyme
1/2 teaspoon pepper
1/4 teaspoon salt
1 pound flank steak, trimmed of fat
1 Tablespoon vegetable oil
1/2 cup finely chopped sweet red pepper
1/2 cup finely chopped sweet yellow pepper
1/2 cup chopped celery
1/2 cup chopped green onions
1/2 cup finely chopped carrots
1/3 cup ketchup
1/4 cup cold water
1 Tablespoon lemon juice
Begin by mixing the flour, 1/2 teaspoon of thyme, 1/4 teaspoon pepper and 1/4 teaspoon salt on a big sheet of wax paper. Score both sides of the flank steak with a sharp knife and then coat the steak top and bottom in the seasoned flour.
Heat the oil in a large heavy skillet on medium high heat. Brown the steak for 5 minutes on each side and then remove it to a plate. In the same skillet add the chopped vegetables, the remaining thyme and pepper. Sauté the vegetables for about 5 minutes until they are tender. Return the steak to the skillet along with the ketchup, water, and lemon juice. Reduce the heat and simmer the steak the 1 hour with a cover on the pan. To serve the steak, it is best to slice it diagonally across the grain. Present the sliced flank steak with the vegetables and sauce along with any side dishes you want to prepare.
