Recipe ingredients:
1-1/2 cups orange juice
2 eggs
1/4 cup milk
1/4 teaspoon cinnamon
1/2 teaspoon sugar
1/4 cup strawberry jam
2 Tablespoons butter
8 slices whole-wheat bread
Use 1/2 cup of the orange juice and whisk it into the eggs, milk, cinnamon, and sugar. Set this aside. Now in a saucepan add the remaining 1 cup of orange juice and stir in the strawberry jam. Heat this mixture to a simmer. Stir constantly until all the jam has turned to a thick liquid. Reduce the heat to low and simmer until the sauce reaches a syrupy consistency.
Heat a large skillet to medium heat and melt 1 Tablespoon of the butter in it. Dip the bread slices into the egg and milk mixture and soak both sides of the bread. Only dip the bread as you are ready to add it to the skillet. Cook each side of the bread until golden brown. Add more butter to the skillet as needed to finish cooking all the slices of bread.
Serve the French toast with the orange strawberry syrup.
