Fried rice recipe
Fried rice can be made with or without meat and serve as either a side dish or a main dish. It is easy and quick to make. You can use leftover rice or freshly cooked rice. If you need to cook fresh rice, be sure to get the rice cooking 20 or 30 minutes ahead of time, so it is ready to add when you assemble the fried rice. A wok is highly recommended for making fried rice.
Because rice is such an affordable food, adding fried rice to your list of quick recipes will help keep your cooking on budget. Plus fried rice tastes good.
This version of fried rice is a bacon and eggs style. If you choose not to use bacon, you will need to use vegetable oil for the frying. You can also substitute leftover meat into the fried rice, like cut up cooked chicken, pork, or shrimp.
Recipe ingredients:
4 eggs
4 slices bacon (optional)
1/2 teaspoon salt
1 to 3 Tablespoons vegetable or peanut oil
3 to 4 cups cooked rice
1 teaspoon minced fresh ginger (or dry ground ginger)
1/2 cup chopped green onions
2 teaspoons toasted sesame seeds
Soy sauce
Heat your wok over medium heat and fry bacon in it. When bacon is done, drain on paper to absorb grease and then crumble bacon when it is cool enough to touch. Reserve about 2 Tablespoons of bacon grease in wok. (If not using bacon in recipe you will use the vegetable oil). Whisk together the eggs and salt and pour into hot wok that is evenly coated with bacon grease or oil. Cook the eggs all the way through, break into small chunks, remove from the wok and set aside in a bowl.
If you need to, add another tablespoon of oil to the hot wok and add the cooked rice and ginger. Stir fry the rice for three to four minutes. Then you can turn off the heat and stir in the eggs, bacon, green onions, and sesame seeds. Drizzle with soy sauce and serve hot.
During the stir frying phase, you can also add 1/2 cup of frozen peas or mixed vegetables.
