Garbanzo sandwich spread recipe
Garbanzo beans are very nutritious and packed with protein and fiber. They take on the flavors of other items very well and serve as a nice base for this spread that can be used in pita breads, on crackers, or on bagels.
The garbanzo bean spread also has the advantage of being very easy to make. You only have to blend it together in a food processor. Keep this recipe handy to serve on a party buffet to satisfy vegetarian guests.
Recipe ingredients:
1 15-ounce can garbanzo beans, drained
1/4 cup sesame seed paste, also known as tahini (3 Tablespoons peanut butter well blended with 1 Tablespoon sesame oil will serve as a substitute.)
3 Tablespoons lemon juice
1 Tablespoon olive oil
2 cloves garlic
1/4 teaspoon paprika
1/4 teaspoon salt
1 Tablespoon fresh chopped parsley
1 2-ounce jar diced pimiento, drained
In your blender jar or food processor bowl, add the beans, sesame seed paste, lemon juice, olive oil, garlic, paprika, and salt. Blend until a smooth paste is created. Scrape the sides of the bowl as necessary and continue to blend. Empty the paste into a bowl and stir in the parsley and pimiento. Cover and refrigerate for 2 to 24 hours.
