Halibut in spicy lemon sauce recipe
Halibut is a wonderful fish that offers delicate flavor. It is a versatile fish that can be prepared many ways, but its mild yet distinctive flesh works well with sauces and relishes that contain spicy elements. This recipe pan fries the halibut and then quickly prepares a light sauce spiced up with banana peppers. This recipe will also work with other types of white fish like snapper, sole, or cod.
Recipe ingredients:
1 lb. halibut fillets
1/2 cup all purpose flour
2 Tablespoons vegetable oil
1 Tablespoon minced garlic
1 cup white wine
1/2 cup lemon juice
1 Tablespoon minced pickled banana peppers
1/2 teaspoon salt
1/2 teaspoon black pepper
Cut the fish into four serving portions and dump the flour in a shallow bowl or pan. Dip the fish portions in the flour on both sides and shake off excess flour. Add the oil to a large skillet and heat over medium heat. Fry the floured fish in the hot oil. After about 4 minutes, turn the fish and fry on the other side for about 4 minutes. If fish pieces are thick, you may need to cook for a little longer. Fish is done if it flakes easily with a fork.
When the halibut is cooked through, remove the fish from the pan and set aside. In the same pan, start to make the sauce. Add the minced garlic to the pan and stir and cook for 1 minute. Then pour in the white wine and lemon juice. Cook and stir until the wine and lemon juice have been reduced by half. Lastly stir in the minced pickled banana peppers and heat through. Season the sauce with salt and pepper and pour over the fish.
