Key lime pie recipe
Key lime pie is a delightful citrus flavored custard pie that most people get very excited about. Key limes are a specific variety of limes from
Florida
. You may even be able to find bottled key lime juice for this recipe when the limes are out of season. If you cannot find key limes or their juice, you can also use any limes you can find, but the key lime variety has the sharpest flavor.
Keep in mind that even if you are going to use bottled lime juice, you still need to find a couple fresh limes for the zest. Because this pie needs up to a day to chill in the refrigerator, do not plan to serve it the same day you make it unless you are starting really early in the morning. You can top this pie with freshly made whipped cream or just buy a bottle of the spray whipped cream from the store.
Recipe ingredients:
Graham cracker crust for 9-inch pie
1-1/2 cups crushed graham crackers
1/3 cup melted butter
3 Tablespoons sugar
Pie filling
1 15-ounce can sweetened condensed milk
4 egg yolks
1/2 cup Key lime juice (If squeezing fresh, you will need 12 to 14 Key limes)
3 to 4 teaspoons grated lime zest
Prepare your graham cracker crust for a 9-inch pie pan ahead of time. Combine the crushed crackers, melted butter, and sugar in a bowl and then press and pat the buttery crumbs into a 9-inch pie pan. Bake for 10 minutes in a 350 degree F oven. Allow the crust to cool before filling it.
To make the filling, whisk together the sweetened condensed milk, egg yolks, lime juice, and zest. Heat the oven to 325 degrees F and pour the filling into the crust. You will bake the pie for about 15 minutes or maybe a little longer. The filling should look set but still jiggle when you tap the pan. Remove from oven and let the pie cool completely on a rack. Then transfer it into the refrigerator until it is chilled.
When ready to serve the pie, you will need the whipped cream. To make fresh whipped cream, you will need to chill a bowl and the metal beaters of your mixer.
Whipped cream ingredients:
1 cup very cold heavy cream
2 Tablespoons powdered sugar
1/2 teaspoon vanilla
Whip the cream on medium high speed until it thickens and then you gradually add the powdered sugar and vanilla while continuing to whip. Serve immediately on slices of key lime pie.
Please note that if you want a key lime pie with a bright green color you can add a few drops of green food coloring to the filling while you make it. This will make the pie more recognizable as key lime, but it is only an aesthetic option. The pale filling of the uncolored key lime pie will definitely taste good without any food coloring.
