Lime chicken recipe

Use this chicken recipe with a peppery lime glaze when you are in the mood for chicken with seasoning a little different than usual. A nice thing about this recipe is its versatility. You can use any type of chicken pieces be they breasts, thighs, drumsticks, or wings. A package of a whole cut up chicken would work nicely or a package of thighs or drumsticks would work just as well.

Basically this is an easy recipe, but it does require you to pay attention and repeatedly brush the chicken with sauce while it is cooking. You can cook this chicken recipe under the broiler or on the grill.

Recipe ingredients:

2 to 2-1/2 pounds chicken pieces

1/2 teaspoon finely grated lime peel

1/4 cup lime juice

1 Tablespoon vegetable oil

2 cloves garlic, minced

1 teaspoon black pepper

1 teaspoon basil

1/4 teaspoon salt

Wash the chicken pieces and pat them dry. Arrange the chicken pieces with their skin sides down on a broiler pan. Start broiling them about 4 inches from the heat source for about 20 minutes. The chicken should be lightly browned at that point.

While the chicken begins broiling, you can mix up the lime sauce. In a bowl stir all the remaining ingredients (lime peel, lime juice, oil, garlic, pepper, basil, and salt). After the chicken has been broiling for 20 minutes brush it with the lime sauce. Then flip the chicken pieces and brush their other sides with the sauce. You will continue to broil the chicken for 5 to 15 more minutes, brushing with the lime sauce every few minutes. The size of the chicken pieces will determine how long you need to keep broiling them. Breasts will require a much longer time than wings or drumsticks. Cook the chicken until no pink shows in the meat and the juices run clear.

To prepare on the grill, apply the directions above except use the grill. If your fire is especially hot you may have to turn the chicken more often to avoid burning.
