Easy bean and cheese nachos recipe

Nachos are always a warm and welcome snack or meal when you don't have a lot of food in the house. This recipe is meat free, which makes it an affordable yet satisfying dish. Teach your teenagers how to make it, so they can heat up a nutritious after school snack. The green chilies in the recipe really enhance the flavor, so it's good to keep a can of these in the pantry for enhancing your Mexican-style dishes.

Recipe ingredients:

1 14-ounce can of refried beans

1 cup tomato salsa

1 4.5-ounce can chopped green chilies, drained

2 cups Cheddar or Monterey Jack cheese, or 1 cup of each

1 bag of corn tortilla chips

Add the refried beans, salsa, and drained green chilies to a saucepan and heat over medium heat. Be sure to stir it often because beans are thick and tend to start burning on the bottom before the heat reaches through to the top of the mixture. Next, slowly stir in the shredded cheese until it is melted and well blended with the beans and salsa.

Arrange the tortilla chips on individual plates or a big platter. Spoon the cheese and bean mixture over the chips, building layers. Serve immediately. If desired, garnish with foods like sour cream, avocado, black olives, green onions, or shredded lettuce.
