Orange cranberry nut quick bread recipe
There is no end to the delightful diversity in the quick bread recipe category. This orange cranberry bread is delicate and flavorful. Orange zest is a magical ingredient that makes everything taste better, and the orange flavor partners wonderfully with the cranberries.
Quick tip: You can most easily find fresh cranberries in the fall around Thanksgiving time. Buy a few bags then and toss them in the freezer so you can make cranberry recipes throughout the year.
2 cups flour
1 cup sugar
1-1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup orange juice
2 Tablespoons vegetable oil
1 Tablespoon grated orange peel
1 egg, beaten
1-1/2 cups fresh or thawed cranberries, chopped
1/2 cup chopped nuts
To prepare, grease a 9 x 5 inch loaf pan and preheat the oven to 350 degrees F. In a large mixing bowl stir together the dry ingredients (flour, sugar, baking powder, salt, and baking soda). Next, stir in the orange juice, grated orange peel, and beaten egg. Mix until all the dry ingredients are moist and there are no clumps. Stir in the chopped cranberries and nuts.
Spread the batter into the loaf pan and bake for about 55 minutes. The quick bread is done when a toothpick inserted in the center comes out clean, but try not to over bake.
