Orange mousse recipe
Mousse desserts are exceedingly pleasant after a nice meal and not served as often as they should be. Except for allowing time to set in the refrigerator, a mousse dessert is usually fairly easy to make. This orange mousse recipe tingles with citrus flavor that will happily refresh a palate after any type of meal.
Recipe ingredients:
1 cup orange juice
2 Tablespoons lemon juice
3/4 cup sugar
1 Tablespoon unsweetened gelatin
1/4 cup water
1 Tablespoon orange liqueur
3 egg whites
3/4 cup cream, whipped stiff
1 orange
Stir 3/4 cup sugar into the orange and lemon juices in a bowl. Allow to stand for about 10 minutes until the sugar softens. To prepare the gelatin add it to a double boiler along with the 1/4 cup water. Heat and stir the gelatin until it is dissolved. Then add the gelatin to the orange and lemon juice mixture. Also add the orange liqueur at this time. Make sure that the gelatin is well mixed into the juices and then refrigerate until the gelatin has partially set. The consistency will be like an egg white, slightly gelatinous but still runny.
Now beat the orange and lemon mixture until it is fluffy. In another larger bowl, use an electric mixer to beat the egg whites until stiff peaks form. Stiff peaks are evident when you lift the beaters out of the egg whites and the peaks do not slop over. You will also need a third bowl to beat the cream until it is stiff whipped cream. Then gently fold with a metal spoon, the whipped cream into the beaten egg whites. Next fold the orange and lemon mixture into the whipped cream and egg whites. Spoon the mousse into 8 dessert cups or even wine glasses. Cut the orange into 8 wedges to garnish each mousse.
