Potato pancakes recipe

Throwing away half a pot of mashed potatoes that went uneaten during a big family dinner is just a shame, but then again leftover mashed potatoes are not very exciting. The solution for deliciously recycling those leftovers is potato pancakes.
Recipe ingredients:
2-1/2 cups mashed potatoes
1/4 cup flour
1 egg
1/2 cup plain bread crumbs
2 Tablespoons vegetable oil
Wet your hands and pat the mashed potatoes into 4 to 6 patties about 1 inch thick. Into three separate small bowls add the flour, the egg (beaten), and the bread crumbs. Carefully dredge each potato patty in the flour on both sides, then dip in the egg, and then dredge again on both sides in the crumbs. Repeat this process with each patty.
Heat a large skillet to medium heat and add the oil. Add the patties to the skillet and cook them uncovered for about 10 minutes. They should become nicely browned on the bottom. With a thin spatula carefully turn each patty. The patties are delicate so be careful. Use a second spatula or a knife to help control the flipping if you need to. Lower the heat so that the second side does not brown too quickly. You want the patties to finish cooking through. Once the second side is browned, they are ready to serve.
