Southwestern style eggs recipe
This easy eggs and sausage recipe with zesty salsa flair would make a special breakfast or a quick and satisfying dinner. You can use the Chihuahua cheese for a more authentic flavor or substitute with mozzarella. The Chihuahua cheese might be hard to find, but try looking at a Mexican grocery.
Recipe ingredients:
1 pound loose chorizo or regular pork sausage
1/2 cup chopped onion
1 large green bell pepper, cut into 1-inch pieces
1-1/4 cups tomato salsa, fresh or out of a jar
4 large eggs
1 cup shredded Chihuahua or mozzarella cheese
In a large skillet over medium heat, cook the sausage, onion, and bell pepper. Stir the sausage and vegetables every minute or so until the sausage is brown. Now drain all the grease and then stir in the tomato salsa. Make sure everything is evenly blended and spread out in the pan and then with a big spoon or spatula clear four spaces in each quadrant of the pan. Break an egg into each space. Put a lid on the skillet and turn the heat down to low. Cook for about 12 minutes or until the egg whites are cooked and the yolks have thickened. While still hot, sprinkle with the shredded cheese and serve with sour cream or guacamole.
You can control the spiciness in this recipe by choosing between the chorizo and plain sausage. Chorizo will create a hot dish that has plenty of appealing flavors. Also, choosing among the salsa variations of mild, medium, and hot will impact how spicy this dish turns out.
