Spicy peanut chicken recipe
Try this chicken recipe for an exciting change a pace with familiar flavors. The addition of peanut butter in the sauce tastes quite good. Typically this chicken will be served in its sauce over white rice, but rice noodles would accompany it nicely as well. Start your rice cooking right before you begin cooking the chicken so that it will be ready and hot when you serve the chicken.
Recipe ingredients:
1 Tablespoon vegetable oil
1 lb. skinless boneless chicken, cut into 1-inch cubes
1 cup diced onion
1 Tablespoon minced garlic
2 Tablespoon curry powder
1 teaspoon salt
Dash pepper
1 cup chopped red or green bell pepper
1 Tablespoon all purpose flour
2 cups tomato juice
1/4 cup peanut butter
Place a large skillet over medium heat. Add the oil, chicken cubes, and onion. Stir and cook until the chicken is no longer pink inside, which will take about 10 minutes. Now add to the pan the garlic, curry powder, salt, and pepper. Cook and stir for another minute and then add the chopped bell pepper. Sprinkle the Tablespoon of flour over the mixture and stir in. Cook for another couple minutes and then pour in the tomato juice. Bring everything to a boil and cook for about 5 minutes until sauce starts to thicken. Lastly blend in the peanut butter and heat through. Serve immediately over rice or noodles.
