Mozzarella basil and tomato salad recipe
This refreshing classic salad recipe of slices of mozzarella and tomato simply sings of summer. It is the perfect salad recipe for using up tomatoes when the garden explodes with them. Simple to prepare, the mozzarella and tomato salad is a delightful first course for a nice Italian dinner. It is best if you prepare this salad right before serving. When you prepare the salad, have the tomatoes at room temperature for the best flavor.
Recipe ingredients:
6 medium, ripe tomatoes
3 or 4 fresh small mozzarella cheeses, called bocconcini
1 Tablespoon lemon juice
4 Tablespoons virgin olive oil
Shredded fresh basil leaves
Freshly ground black pepper
Slice the tomatoes and the mozzarella cheeses. Keep the slices of cheese thin. Alternate the slices of tomato and cheese as you arrange them on a serving dish or on individual salad plates. Stir together the lemon juice and olive oil in a small bowl. Whip them up well with a whisk. Drizzle this simple dressing over the tomatoes and cheese. Distribute the shredded basil leaves over the salad and grind pepper over everything. Serve immediately.
