Crunchy tropical chicken recipe
Most people like chicken, and cooks are always on the lookout for a new chicken recipe to try. This simple recipe for crunchy tropical chicken brings together ingredients that are all proven partners of chicken: pineapple, rice, and peanuts. This delicious combination is also packed with nutrition, especially potassium, B vitamins, and protein. There is very little fat, and if you find some low sodium chicken stock, then you can control the salt as well.
This recipe yields two servings, but for a bigger dinner, it is easily doubled or quadrupled.
Recipe ingredients:
1 whole chicken breast, skinned and boned
1/4 cup chicken stock
2 Tablespoons lemon juice
2 Tablespoons pineapple juice
1 teaspoon molasses
2 cloves garlic, crushed
1 cup pineapple chunks
1/2 cup peanuts
2 cups cooked brown rice
Make sure that you cook your rice first. Brown rice takes longer to cook than white rice. When the rice is done or within a few minutes of being done, you can continue with the recipe. It is a quick one.
After your chicken breast is skinned and boned, cut it into thin strips. Heat a wok and add the chicken stock, juices, molasses, and crushed garlic. When the mixture gets hot and steamy, add the chicken strips and stir for 5 to 7 minutes over medium high heat. Once the chicken is cooked through, add the pineapple and peanuts and keep stirring over the heat for a couple minutes. Then mix in the cooked brown rice and turn off the heat. Serve immediately.
