Vegetable burrito recipe

In the summer when you have an abundance of vegetables, add this vegetable burrito recipe to your menu planning for a hot and healthy dinner entrée. Vegetable burritos are a tasty way to eat your vegetables, especially if you are a person who does not naturally like vegetables. All the cheese and spices in the recipe will keep you happy.

Recipe ingredients:

2 Tablespoons vegetable oil

1 large onion, thinly sliced

2 cloves garlic, minced

1/2 pound mushrooms, sliced

1 green bell pepper, cut into thin strips

2 carrots, thinly sliced

4 zucchini, cut into thick slices

2 tomatoes, peeled and cut into 1/2 inch wedges

1 7-ounce can diced green chiles

1 2-1/4 ounce can sliced black olives, drained

1 teaspoon chili powder

1 teaspoon salt

1/2 teaspoon cumin

1/2 teaspoon oregano

1-1/2 cups shredded Cheddar cheese

1-1/2 cups shredded Monterey jack cheese

8 to 12 warm flour tortillas

Heat a large skillet over medium heat with the oil in it. Add the onion and garlic and sauté until tender. Then stir in the mushrooms, green pepper, carrots, zucchini, tomatoes, chiles, olives, chili powder, salt, cumin, and oregano. Cook until the mixture starts to bubble, then cover and reduce heat so that a light simmer is maintained for 10 to 12 minutes.

Then remove the lid and increase the heat until the filling begins to boil. Stir until all vegetables are tender and the liquid evaporates, which will take about 10 more minutes. Now stir in half of both kinds of cheese and melt it into the vegetable blend. Turn off the skillet and pour the filling into a shallow baking dish. Sprinkle the rest of the cheeses on top of the vegetable cheese blend and heat under a broiler until all cheese is melted. Keep the pan 6 inches from the heat source. This will only take a few minutes.

The cheese vegetable filling will then be spooned down the centers of the warm flour tortillas and rolled up. Have condiments such as sour cream, guacamole, chopped green onions, and salsa on hand to serve with the vegetable burritos.
