Walnut bread recipe
This walnut bread recipe makes two round loaves that offer a hearty nutty bread that works well with dips and accompanies soups nicely. The walnut oil in the recipe might be hard to find except at fancy supermarkets and specialty food shops.
This bread recipe calls for toasted walnut pieces. To prepare the walnuts, spread them in a pan and heat them in a 350 degree F oven for 10 minutes.
Recipe ingredients:
3/4 cup warm water
1 teaspoon active dry yeast
1 cup all purpose flour
3 cups toasted walnut pieces
1 cup warm water
1-1/2 teaspoons active dry yeast
1 Tablespoon salt
1/2 cup walnut oil
2 teaspoons ground pepper
4-1/2 to 5-1/2 cups all purpose flour
To begin stir together the 3/4 cup water and teaspoon of yeast in a large bowl. Cover loosely with plastic wrap and allow to rest in a warm place for about 1 hour. It should be bubbly when you go back to it.
Now stir in the walnuts, 1 cup more of warm water, walnut oil, pepper, salt, and remaining yeast. Using an electric mixer or a wooden spoon mix in 4 cups of flour. Spread flour on your counter and turn the sticky dough out onto it. Knead the dough for about 5 minutes, sprinkling with the remaining flour as needed to reduce stickiness. Dough should be smooth and elastic when you are done kneading it. Place the dough in an oiled bowl, cover with a clean cloth, and allow to rise until double, which will take 1 to 2 hours.
Once the dough has doubled in size, punch it down and cut it into two portions. Shape them into round loaves by pulling the edges into the center of the dough ball and crimping seams firmly shut. Put the loaves seam-side down on baking sheets lined with parchment paper. Cover again with a clean cloth and allow to rise until doubled in size. This will take about an hour. When the bread is ready to bake, cut 2 or 3 1/2-inch deep slashes across the rounds with a very sharp knife.
Heat your oven to 450 degrees F and right before you place the bread in the oven, spray the inside of the oven with water. Place the bread in the oven. Five minutes later, spray water throughout the oven again. Repeat at the 10 minute point as well. After the bread has been baking for 20 minutes, lower the oven temperature to 400 degrees F and bake until bread is nicely browned. Let the bread cool on rack. You can freeze this walnut bread for up to three months if you need to.
