Walnut cake with mocha frosting dessert recipe
This cake recipe produces two loaf shaped cakes. You might be able to take one to a small party and leave one at home and thereby make everybody happy. It is very rich and delicious, but put the chickens on notice because you are going to need 10 eggs!
This cake also calls for chopped walnuts. When walnuts are chopped they add a rich and almost addictive nutty flavor throughout their accompanying ingredients. A food processor is recommended for chopping the walnuts. This will produce a finely chopped product that will deliver walnut yumminess to every bit of cake.
Recipe ingredients:
Cake:
1 cup butter
2 cups sugar
5 eggs
1 teaspoon vanilla extract
3-1/2 cups cake flour
1 Tablespoon baking powder
1/2 teaspoon salt
1 cup milk
2 cups chopped walnuts
Frosting:
2 1-ounce squares unsweetened chocolate
2 Tablespoon strong freshly brewed coffee
5 egg yolks
1 cup sugar
1/4 teaspoon salt
1 cup butter
1 cup chopped walnuts
Prepare two loaf pans by greasing them and heat your oven to 350 degrees F. In a large bowl, cream the butter and sugar and then start beating in the eggs one at a time. After the eggs are all blended in, add the vanilla extract. Sift the dry ingredients together into another bowl. Gradually blend in the dry ingredients a little at a time, alternating with the milk. Once all the dry ingredients and milk are added, then you can stir in the chopped walnuts.
Divide the batter evenly between the loaf pans and bake the cakes for 45 to 50 minutes. Cool and pop out of the pans.
As with any cake you will want the cake loaves to cool before frosting them. When the cakes are cool enough to frost, start making the frosting by melting the chocolate in the hot strong coffee. Blend the chocolate and coffee thoroughly and set aside. In a two-quart sauce pan, beat the egg yolks and then beat in the sugar and salt. Slowly add the chocolate coffee mixture and place the pan on the stove over medium heat. Put the butter in the pan and stir frequently. Cook the frosting until it thickens. This may take about 10 minutes. Once the frosting is of a spreadable consistency, stir in the chopped walnuts. You may frost your cakes with the warm frosting.
